¼ cup F. Whitlock and Sons Smokehouse Tomato Chutney Sauce*
2 tablespoons cider vinegar
2 tablespoons F. Whitlock and Sons Mexican Style Chilli Rub
1kg Chicken Wings
¼ cup mayonnaise
¼ cup buttermilk or sour cream
1 teaspoon F. Whitlock and Sons Mexican Style Chilli Rub, extra
2 tablespoons finely chopped chives
Get down to business:
Preheat the oven to 200°C. Line a roasting pan with baking paper. Combine the BBQ sauce, vinegar and F. Whitlock and Sons Mexican Style Chilli Rub in a large bowl. Add the chicken and toss to combine.
Arrange the chicken in a single layer in the lined pan. Bake, occasionally turning, for 40-45 mins or until the chicken is golden brown and cooked through.
Meanwhile, make the spicy mayonnaise. Place the mayonnaise, buttermilk or sour cream and extra F. Whitlock and Sons Mexican Style Chilli Rub in a bowl and mix well. Stir in the chives and season to taste. Transfer the mixture to a serving bowl.
Arrange chicken on a serving platter and serve with the spicy mayonnaise.
