Satay Peanut Noodles

Satay Peanut Noodles
Preparation time: 5 minutes
Cooking time: 20 minutes
Serves: 2
You will need:
  • 200g egg noodles
  • 200g mushrooms, sliced
  • 2 garlic cloves, minced
  • 250ml Whitlock’s Peanut Satay Chunky Sauce
  • 1 spring onion, sliced
  • 3 Tbsp sesame seeds
  • ¼ cup chopped peanuts, toasted
  • Chilli flakes, optional
Get down to business:
  1. Cook noodles according to the packet instructions. Reserve ¼ cup of the cooking water and drain.
  2. Sauté the mushrooms and garlic in a drizzle of olive oil in a frying pan over medium-high heat for 4-5 minutes or until golden brown. Add in the Peanut Satay Chunky Sauce and bring to a simmer.
  3. Once simmering add the drained noodles and stir until well coated in the satay sauce, adding in any cooking water if required.
  4. Garnish with spring onions, sesame seeds, peanuts and chilli flakes if desired. Serve and enjoy!
  5. TIPS : Sauté seasonal greens with the mushrooms for an extra serving of vegetables.
