Smoked BBQ Pork Cutlet with Roasted Apple

You will need:
  • 3 medium carrots, sliced
  • 2 small red onions, cut into wedges
  • 2 green apples, cored, cut into wedges
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon roughly chopped sage leaves
  • 4 teaspoons F. Whitlock and Sons Smoky Manuka Style Rub
  • 4 x 200g pork cutlets
  • 4 x 200g pork cutlets
Get down to business:
  1. Preheat the oven to 200°C.
  2. Toss the carrot, onions and apple with the vinegar and 1 tablespoon of the olive oil in a large baking dish. Sprinkle with sage and season with salt and pepper. Roast in the oven for 25 minutes or until the carrot and onion are tender.
  3. Meanwhile, rub 1 teaspoon of the F. Whitlock and Sons Smoky Manuka Style Rub over each of the pork cutlets. Heat the remaining oil in an ovenproof frying pan over medium high heat. When hot, cook the pork chops, in batches, for 2 minutes on each side or until brown. During the last 5 minutes of vegetable cooking time, transfer the pork to oven to finish cooking.
  4. Remove the vegetables from the oven, add the spinach and toss gently to combine and wilt the spinach.
  5. Serve the vegetables topped with the pork cutlets and drizzled with pan juices.
