Smoked Manuka BBQ Stuffing Mix

You will need:
  • 100g butter
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cups fresh sourdough or ciabatta chunky breadcrumbs (use a breadknife to cut 1 cm chunks)
  • 1 teaspoons F. Whitlock and Sons Smoky Manuka Style Rub
  • Finely grated zest of 1 lemon
  • ½ cup macadamias, lightly toasted, chopped
  • ½ cup dried apples, roughly chopped
  • ¼ cup chopped parsley
  • 2 eggs, lightly beaten
Get down to business:
  1. Preheat the oven to 180C and lightly grease a 16cm x 26cm ovenproof dish.
  2. Heat half of the butter and the olive oil into a small frying pan over medium low heat. Add the onion and cook for 2-3 minutes until soft.
  3. Place into a large bowl. Add the bread crumbs, F.Whitlock and Sons Smoky Manuka Style Rub, lemon zest, macadamias, apples and parsley. Season to taste. Add the eggs and stir to combine.
  4. Transfer the mixture to the prepared pan, dot with the remaining butter and cook for 25 to 30 minutes or until golden. Cover with foil if it browns too quickly.
  5. Serve with roast chicken, roast beef, roast pork, sausages or vegetable dishes.
  6. Tip: use as a filling for stuffed vegetables such as pumpkin, capsicums, mushrooms, tomatoes or courgettes. Top with grated cheese and bake at 180C until vegetables are cooked through and cheese is golden.
