Swordfish With Citrus Salsa

You will need:
  • ¼ cup olive oil
  • 2 tablespoons F. Whitlock and Sons Smoky Manuka Style Rub
  • 4 medium swordfish steaks (or other firm fleshed fish steaks / thick fillets such as Hapuka)
  • Citrus Salsa
  • 2 oranges, peeled and chopped
  • 1 lime, peeled and chopped
  • 1 avocado, peeled and chopped
  • 1 small red onion, finely chopped
  • ½ cup coarsely chopped coriander
  • 100g spinach leaves, washed
Get down to business:
  1. Combine 3 tablespoons of the olive oil with the F. Whitlock and Sons Smoky Manuka Style Rub and use to coat the fish.
  2. Heat the remaining oil in a large frying pan over medium high heat. Add the fish and cook for 2 to 3 minutes on each side or until the fish is brown and just cooked through.
  3. Meanwhile, combine the oranges, lime, avocado, onion and coriander in a small bowl and season to taste.
  4. Serve the fish with the citrus salsa and spinach leaves on the side.
